Expert Reviews of the WÜSTHOF Gourmet Utility Knife

Melissa Brunetti I like to use this knife for very specific purposes. It works best in slicing situations where you need the knife to have a little bit of "give." It bends quite easily, and for good reason: It is the perfect knife with which to fillet fish. It gets close to the bones, leaving a clean cut with very little waste. It is also good for slicing delicate raw or cured fish. The "bend-ability" of this knife does make it more on the fragile side, so make sure to not use it for anything heavy-duty, like butchering meat.

Melissa Brunetti gave 4 of 5 stars. The blade is incredibly thin and flexible. I would not recommend using it in sturdier applications like butchering or cutting through hearty root vegetables. The bend in the blade allows it to be used for fish butchering and slicing. Because it is so flexible, it works great in these applications, hugging the bones and leaving little to no waste.

If it was made from another material I would be hesitant to use it in situations where it bends. I have owned it for 13-plus years and it has sharpened well, held its edge, and has not rusted or chipped.

I have really only found myself in a couple of situations where I wished the knife had been longer, such as butchering a very large fish. I like the length of it because it allows me more control over my slicing strokes and lends itself to expert precision.

Melissa Brunetti gave 3 of 5 stars. While this knife is not able to get quite as sharp as its Japanese counterpart, it gets pretty close. I am more impressed with it because it can hold its edge for longer than most knives. I get it professionally sharpened once or twice a year and then hone it on a diamond steel after a couple of uses, and it is good to go.
