Expert Reviews of the Cangshan Yari Series 6" Chef Knife

 I recommend this knife for enthusiasts in the kitchen looking for a knife that will reward strong technique and purposeful use. The Cangshan Yari was a delight to receive and unbox. Its striking aesthetics stopped me in my tracks with surprise and gave way to a rush of excitement. The magnetic blade guard was a welcome addition because I could see myself taking this out on adventures with me to cook. Picking up the knife, I immediately felt the weight and quality of the Damascus steel, and the octagonal handle felt comfortable and natural in my hands. The first time I took it to the cutting board, I realized right away how extremely sharp it was. However, in slicing up my first eggplant with it, I was surprised when the knife stopped going through the produce. I realized it was my lack of technique, and then a few motion adjustments had it sliding through the vegetable smooth as butter. The 6" is a little small for things like chopping and bigger produce, like squash, but now, with a few weeks under my belt with it, I find myself reaching for this knife more and more, especially for finer slicing applications such as herbs, small vegetables, and fruits. Just using this knife has elevated my knife technique in a very short time.

The thickness of the spine tapers down to an incredibly sharp and precise edge that cuts cleanly with a slicing motion. This is not the knife for chopping straight down.

The blade comes hand-sharpened, and it stays incredibly sharp after continued use due to the 58 +/- 2 Rockwell hardness.
