Expert Reviews of the WÜSTHOF Classic 2-Piece Prep Set

Melissa Brunetti I purchased this set as a starter set fresh out of culinary school, and it has served me well for the last 15 years. These specific knives cover most scenarios I find myself in, except when I need some flexibility in the blade. I personally love to use the pairing knife for intricate knife cuts or as a peeler. I have found them to be of great value. They have really held up nicely over time, and I love that the blade is very low maintenance. It really keeps an edge nicely for a long time between sharpenings.

Storage

5/5
Melissa Brunetti gave 5 of 5 stars. I mostly used this set in a professional setting in the beginning, and it was very easy to store in my knife roll. Once I brought them home, I bought small and large sleeves and stored them in a drawer away from my other utensils. They are very easy to take care of and store.

Blade Sharpness

4/5
Melissa Brunetti gave 4 of 5 stars. While these knives cannot get as sharp as a Japanese knife, they can hold their edge for a long time. This makes them the ideal type of knives to use if someone is busy and will be using them often. Maintaining the knives' sharpness is very easy by simply running them over diamond steel between uses.

Melissa Brunetti gave 4 of 5 stars. If I were to get just two knives in a set, it would be these two. The chef's knife is good to use in most applications, from prepping vegetables to slicing steaks to butchering meat. The pairing knife comes in handy for intricate situations like brunoising garlic or tourneing potatoes.

Melissa Brunetti gave 5 of 5 stars. German knives have a reputation for being heavy and clunky. I find these knives to be the opposite. The construction is finessed in a way that makes using them very elegant and well-balanced. They have a nice weight in my hand but are lighter than most other German knives I have used.
