Leo Cocchiara The Hestan CopperBond Induction Copper Open Skillet was designed with precision temperature work in mind so that chocolatiers and sauciers can whip up perfection in mere minutes compared to using traditional stainless steel. The 5-ply copper core heats and cools rapidly, making complex techniques easier to knock out in a timely manner, so elevating one's cooking by adding a roux, béchamel, or perfectly tempered chocolate is much more approachable. Even for sautéing veggies or searing a protein, the heat control makes it highly noticeable how much of a step up this is from a basic stainless steel or nonstick fry pan. While not ideal for washing in the dishwasher, it's free from capturing food build-up and very easy to clean due to the rivetless design. It's a great addition to any passionate chef's kitchen.
