The Shun Kanso Chef's Knife 8" is a must-have for any cook. This versatile knife is perfect for a wide range of cutting tasks, from chopping vegetables to slicing meat. Based on its Asian counterpart, the GYUTO, this knife features a wider heel and a flat profile towards the heel, making it ideal for push cuts. However, it also has a slight belly from mid-blade towards the tip that allows it to be gently rocked through fresh herbs or spices to produce an incredibly fine mince.
Crafted with precision and care in Japan, this chef's knife boasts an AUS10A blade made of high-carbon stainless steel that offers strength, corrosion resistance, hardness and wear resistance. The added vanadium refines the steel grain enabling a razor-sharp 16° edge on each side of the blade.
The contoured tagayasan wood handle provides an easy and comfortable grip while adding beauty to your kitchen collection. Known as "iron sword wood," tagayasan is noted for its denseness and durability.
