The Miyabi Kaizen II 4.5" Utility Knife is a versatile and reliable workhorse in the kitchen, perfect for precision work both in-hand and on the cutting board. This knife is ideal for slicing fruit, mincing garlic, and cutting very thin cuts of meat or poultry. Handcrafted in Seki, Japan - a city renowned for producing high-quality cutlery - this knife boasts traditional Japanese craftsmanship combined with modern design.
Crafted from resilient FC61 super steel, the core of this knife is protected by an impressive 48 layers of stainless steel. The blade features a stunning flower Damascus pattern that has been darkened through acid dipping to create a dramatic effect. The double FRIODUR® ice-hardened blade offers improved corrosion resistance and remarkable durability.
The artisans at Miyabi hand-hone each blade using the historic Honbazuke method to create an exceptionally sharp edge with a razor-sharp 9.5 to 12° angle. The ergonomic handle is made from black pakkawood and features an improved thicker and rounded bolster for increased comfort and balance during use.
