The Global Paring Knife is a multipurpose small knife that is great for hand peeling, precision cutting, slicing and detail cuts. The perfect knife to devein shrimp, and for removing seeds from chili peppers and skinning or cutting small garnishes. Global knives are sharpened or ground steeply to a point, and to an acute angle while resisting rust, stains and corrosion. The straight edge results in a dramatically sharper knife which stays sharper longer. The edge on a Global knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.
